For zones 3-12, Pak Choy (also called Bok Choy) are a nice addition to your cool climate Organic garden and prefer full sun during the cooler part of the year. Starting Pak Choy in pots is recommended. Use deeply watered soil and place them on the surface lightly covered with vermiculite or sand as they need light to germinate. When seedlings develop their first set of true leaves and are at least 5-6 inches tall, transplant to the garden about 18 inches apart. Transplant in very early spring, or in early fall once your summer weather starts to cool down.
